round 2 of quote of the week
I just made homemade chili and Landon doesn't like it.
I told him he could either take 7 bites or go to bed.
He took 2 and then said yay I did it.
He got down from the chair and I told him he could go finish his 7 bites or go to his room and go to bed.
He responds..
"What Mom? I can't hear you."
I stupidly repeat myself..
and he continues..
"WHat?? I can't hear you Mom. Sorry. Can't hear you."

Our script
Do you know how loved you are?
You asked me last night as I was putting you to bed.
"Mom do you love me?"
I said, "I love you soooooooo sooooooo sooooo much bubba."
"I love you so much too mom."
And you were out like a light.
You didn't have an ounce of doubt in your voice. You knew how much I love you. That was a special moment between us though. I can't explain it, but I know you felt it too. Love can't always, and may never be fully summed up by words. It is those feelings, like you laying in my arms, in the dark, knowing you are safe that capture the essence of love.
You are my first born. You exceeded my expectations. You never cease to amaze me. I know you are going to do great things in your life. This is just the beginning. And when you look back at this years from now, you will see the faith I had at you right now at 2 years old, that even goes back to the day you were born. You were and are and will always be perfect.
I hope that I never fail you. As a mother, as a friend and as a role model.
I want to write to you often, to your brother as well. So you can always come back to this, in times of doubt, struggle or when you just need a reminder of the great son you are.
I hoped for a boy. Your dad and I had the hardest time deciding on a name. If you were a girl it would have been Macey Jay Faucher.
But agreeing on a boys name was not as easy.
Landon.
It suits you so well. You would have lived up to any name you were given, but I think Landon is perfect. Masculine and cool, just like you. We (your dad may or may not agree with this), got it from Landon Donavan. One of the greatest soccer players. Your dad also had a friend named Landon and I always loved the name. It was not common when we decided on it for you, but I think that has changed.
Thank you for being you.
You are not afraid to be yourself.
You are fearless.
You are so funny.
You are so strong willed son. It is a challenge to us, but I want you to have your own opinion, stand up for yourself and not back down in life. I have no worries about that though.
You are so loved and make us proud to call you our son.

Mom of the Year #4
Had to space things out a bit so you wouldn't start questioning my mommy skills,
but sometimes its inevitable.
Landon aka Mr. Independent, likes to get in the car "BY MYSELF!"
So to save time,
I open his door while he climbs in and puts his straps around him,
I go around and put Gavin in
and come back and buckle Landon in.
Yes, its a process.
So the other day we went to visit my parents in Rancho.
We had a great time as always.
I pull into the garage
and when I open Landon's door he is out of his carseat getting toys on the ground.
Yep, this mom (thumbs pointing to myself), forgot to do the last step of buckling that little boy in his carseat while I drove over 30 mins home.
Awesome! Another Mom-of-the-Year moment.

I wonder what Landon will choose to do tomorrow and what adventure it will take us on.
Breakfast in bed is overrated
Roasted Veggie Fritatta: (In case your man wants to try)
3 Medium red bell peppers, seeded and cut into quarters
4 Garlic Cloves, unpeeled
2 Large zucchini, cut into 3.5 inch strips
1 medium onion, cut into 1/2 inch slices
1 Tbsp Olive oil
4 Eggs plus 6 egg whites
1 tsp salt
1/4 tsp cayenne pepper
1/3 cup finely shredded parmesean cheese
1. Preheat oven to 425*. Line the bottoms of 2 baking sheets with foil and cooking spray.
2. Place bell pepper and garlic on one pan, and zucchini and onion on the other. Brush vegetables with oil. Roast zucchini and onion on lowest rack and bell pepper and garlic on center rack ofoven for 15 minutes. Remove zucchini and onion from oven and move the bel pepper tray to bottom rack for about 10 more mins. Remove from oven and let stand about 5 mins. Remove skin from bell pepper and garlic. Coarsely chop veggies and place in a large bowl. Stir in 1/2 teaspoon salt.
3. Reduce oven temp to 350*. Coat a 9-by-1.5inch round cake pan with cooking spray. In a medium bowl, whisk together eggs and egg whites, remaining salt and cayenne pepper. Stir egg mixture into veggie mixture; stir in parmesean cheese. Pour mixture into cakepan.
4. Bake uncovered, 45-50 minutes or until center is set. Remove from oven and let stand 5 minutes before serving.
You won't regret it. :)
